Menu Plan


If you guys have any recipes that are perfect for summer's hot weather, please let me know! I'm am going to experiment with some cold pasta salads this week to avoid eating hot meals every night.  Here's the menu plan for the week:


Breakfast
-Omelets
-Oatmeal
-Cereal
-Breakfast burritos

Lunch 
-Homemade salads
-Pasta Salads
-Sandwiches
-Leftovers

Dinner
-Chipotle Style Steak Burrito Bowl
-Tacos/Burritos
-Salmon and Rice
-Tilapia and Rice
-Pasta Salad
-Lasagna
-Dinner Out

Snacks/Side Dishes
-Fruits (Cantaloupe, Pineapple, Strawberries, Blackberries, Blueberries, Grapefruit, Apples, and Bananas.  I love when fruit is in season!!)
-Vegetables (Cut up carrots, celery, and cucumbers)

Korean BBQ Beef

I originally found this recipe on Pinterest.  I love Korean BBQ beef, but it is so expensive to eat it at a restaurant.  This recipe creates a similar meal using ground beef instead of the traditional beef used.  It is super easy and inexpensive.

I didn't have all of the ingredients at home so I had to make a few modifications:
  • Teriyaki sauce instead of soy sauce
  • Olive oil instead of sesame oil
Also, instead of buying crushed red peppers, I just ask for extra whenever we order a pizza.  They last for a long time and are super convenient.  Just tear open one package and pour in the amount you want!

Sloppy Joes

Okay, so I know this isn't the healthiest meal, but it sure was yummy!

Ingredients:
  • Can of Hunts Manwich Sloppy Joe Sauce
  • 1/2 Zucchini
  • 1 Cup of Mushrooms
  • A few strands of Parsley 
  • One Stalk of Green Onion
  • 1/4 Green Bell Pepper 
  • 1/2 lb of Ground Beef
  • Hot Dog Buns
Steps:
  1. Brown beef and drain the fat.
  2. Add in sloppy joe sauce
  3. Chop all veggies into small pieces and add to meat sauce (feel free to add any other veggies you have in your fridge or add more of the ones I listed)

This recipe is super easy and cheap.  It's great for those nights when you only have a few minutes to make dinner.  I would love to make my own sloppy joe sauce in the future.  Does anyone have a recipe for homemade sloppy joe sauce?

 I always use a hot dog bun for my sloppy joes instead of the traditional hamburger bun.  Its WAY less messy than the hamburger bun! :)
