Menu Plan


If you guys have any recipes that are perfect for summer's hot weather, please let me know! I'm am going to experiment with some cold pasta salads this week to avoid eating hot meals every night.  Here's the menu plan for the week:


Breakfast

-Fruits (Cantaloupe, Pineapple, Strawberries, Blackberries, Blueberries, Grapefruit, Apples, and Bananas.  I love when fruit is in season!!)
-Vegetables (Cut up carrots, celery, and cucumbers)

Korean BBQ Beef

I originally found this recipe on Pinterest.  I love Korean BBQ beef, but it is so expensive to eat it at a restaurant.  This recipe creates a similar meal using ground beef instead of the traditional beef used.  It is super easy and inexpensive.

I didn't have all of the ingredients at home so I had to make a few modifications:
  • Teriyaki sauce instead of soy sauce
  • Olive oil instead of sesame oil
Also, instead of buying crushed red peppers, I just ask for extra whenever we order a pizza.  They last for a long time and are super convenient.  Just tear open one package and pour in the amount you want!

Sloppy Joes

Okay, so I know this isn't the healthiest meal, but it sure was yummy!

Ingredients:
  • Can of Hunts Manwich Sloppy Joe Sauce
  • 1/2 Zucchini
  • 1 Cup of Mushrooms
  • A few strands of Parsley 
  • One Stalk of Green Onion
  • 1/4 Green Bell Pepper 
  • 1/2 lb of Ground Beef
  • Hot Dog Buns
Steps:
  1. Brown beef and drain the fat.
  2. Add in sloppy joe sauce
  3. Chop all veggies into small pieces and add to meat sauce (feel free to add any other veggies you have in your fridge or add more of the ones I listed)

This recipe is super easy and cheap.  It's great for those nights when you only have a few minutes to make dinner.  I would love to make my own sloppy joe sauce in the future.  Does anyone have a recipe for homemade sloppy joe sauce?

 I always use a hot dog bun for my sloppy joes instead of the traditional hamburger bun.  Its WAY less messy than the hamburger bun! :)

Homemade Pizza

We LOVE pizza!  We decided to try out the Jiffy Pizza Crust mix, and we decided that it was a winner.  It was super cheap and tasted great.  Homemade pizzas are great because you can chop up and add just about any vegetables you have leftover in your fridge.

Ingredients:
  • Jiffy Pizza Crust Mix
  • 1/2 a Jar of Pasta Sauce 
  • 1 Cup of Shredded Mozzarella Cheese
  • 1/4 Cup of Shredded Cheddar Cheese
  • 1/5 of a Red Bell Pepper
  • 2 Baby Mushrooms
  • 1 Green Onion
  • 3 Spinach Leaves
  • 13 Pepperonis 
Steps:
  1. Add water to pizza crust mix and let sit for five minutes (Eventually, I plan on getting a bread maker so I can do this part from scratch; but for now, the jiffy mix is super cheap and delicious).
  2. Knead crust a few times on a floured surface and then spread out on a pizza pan. Cook for 2 to 3 minutes at 425 degrees.
  3. Take out of oven and spread pasta sauce over crust.  Make sure you cover most of the pizza with the sauce.  You can add more or less pasta sauce depending on how much sauce you usually like on pizzas.
  4. Sprinkle cheese over the pasta sauce and then arrange pepperonis and chopped veggies on the pizza.
  5. Cook for about 10 minutes at 425 degrees.
*Serves 2 People

Salsa and Cheese Omelet

This is by far my favorite omelet that I have ever had.  It is so simple and easy, but incredibly delicious!!!

Ingredients:
  • 2 Eggs
  • 1/2 to 1 Cup of Cheddar Cheese (Depending on how much cheese you like)
  • 1/3 Cup Of Salsa (I get the chunky kind of salsa)
Steps:
  1. Crack eggs over pan.  Stir together with spatula.   You can beat your eggs together before you put it in your pan, but I like to just mix them together in the pan to save cleaning an extra dish.
  2. Sprinkle some cheese into the egg mixture.
  3. Cook on medium until the bottom of the egg mixture starts turning white.  Test the side of the egg mixture with your spatula to test if it will hold together when you lift up the side to fold it over.
  4. Once it is folded over, sprinkle more cheese on it and pour half of the salsa on it.  Let it sit for one minute.
  5. Then use the spatula to flip it over to cook the other side. Once flipped over, add the rest of the cheese and salsa on top on it.  Let sit for one minute. After the one minute, keep flipping it over until both sides appear to be fully cooked.
*Serves 1 Person
